V8 Soup


Brown together in pan:
1 lb hamburger
1/2 cup onion
1/4 cup green pepper (optional)

Boil in water until cooked:
2 cups carrots peeled & chopped(we start boiling these sooner than the potatoes because they take longer to cook)
3 cups potatoes peeled & chopped

Once both are done cooking -- drain the water from the vegetables then combine the meat and the vegetables in a pot and add:

1 large can of V8 Juice
1/2 cup ketchup
2 teaspoons salt (or to taste)
2 tablespoons dried parsley flakes
2 teaspoons sugar
& a little pepper

Heat until warm and serve!

This was my favorite soup as a child!  Hope you enjoy it too!!
